I don't know how the LDS church uses their money, but in my church at least the line between "filling coffers" and "helping people" is rather blurry. Money given to Orthodox Christian Mission Center will go to the mission in Tanzania, which evangelizes the locals there...and also provides them with a fair amount of medical care. Our missionary is a nurse. Similarly, I just tithed to our struggling mission in Pakistan, which consists of the one Orthodox priest there and his family. Our donation keeps that family fed and clothed and all. And also pays for medical supplies for the poor, homeless, shut-ins, invalids, etc., all of whom that lone priest makes an effort to help regardless of their beliefs. It all goes in the same pot, hand in hand.
Finally, mental images of the Borgia Popes notwithstanding, churches are not just wealth repositories; they're also centers and grounds for the local community. If anybody at our church falls on hard times, s/he can count on the rest of us for help. The priest is also the guy pretty much everyone leans on for emotional support in such times. And that's in addition to the parts of the church fund that go to the local food pantry, crisis pregnancy center and the like.

Tithes are used by the church in numerous ways. There are nearly 30,000 congregations throughout the world, and simply providing them with buildings in which to meet and classrooms to teach in absorbs a large part of the church’s income. Educational programs, including church-owned universities, also require funding, as do many other programs throughout the world.
And in addition to their tithes, most faithful members make other voluntary contributions to humanitarian aid and to the monthly “fast offering.” Fast offerings are the result of fasting for two successive meals on the first Sunday of each month, and donating the cost of the meals. Local bishops then use these funds to help the poor and needy.
