            It's like walking into a Chinese restaurant and finding that all of the people who work there are Mexicans. Not a good sign.

            Also, what is it with your obsession with carbohydrates?

              If they know what they are doing, who cares? At my old job, we had a Chinese fast-food joint and we had people who weren't Chinese making Chinese food. They learn how to make the food properly according to the recipes and who the hell cares what their ethnic background is? Why the hell would it make a difference to the food?

                      How is it that Chinese people working there is a guarantee that they know what they are doing?

                      Frankly, I'd trust a place that hires the best workers they can get regardless of ethnicity far more than a place that is run by family members who are all Chinese.

                            I have a hunch that Chinese people generally know more about Chinese food than other people do.

                              I have a hunch that 'other people' probably had to learn how to make Chinese food so they're more aware of following the recipe.
