I love Wyoming in the summer. Parts of Idaho are also gorgeous, however, both states are VERY cold in the winter. Nothing temperate about either of them. If you are interested in freezing your butt off, you are welcome to live there, but for me, I am quite content to visit in summer, especially Wyoming. I am in love with the Tetons and I love rafting down the Snake River outside of Jackson Hole, but the entire state shuts down from October to April.
Idaho does have a more visible population of Mormons than other states, but that's not a negative trait. Mormons generally make good neighbors and are not really as weird as some people on this site make them out to be. Utah itself is a beautiful state, and really isn't "all" Mormon either.
I would personally choose to live in Northern California or Oregon, preferably on the coastline. The most gorgeous forests and ocean-views I have ever seen are on the upper North-West. The temperature is about perfect and they don't get very much snow.
