Call To Power 2 Cradle 3+ mod in progress: https://apolyton.net/forum/other-games/call-to-power-2/ctp2-creation/9437883-making-cradle-3-fully-compatible-with-the-apolyton-edition
I would go for some sort of generic (for the nation in question) garrison/militia when in doubt, for both the Turks and the Swedes. Regular infantry seems more fitting for either well defended areas or field armies, but not "AI city #15" if that makes sense.
If the uniforms were similar in color, then I would just make sure the horses are not, or something else that would highlight a difference. Confusion over color similarity is far less likely to give grief in Civ than real life, though if an enemy's color looks like an ally's...
Hopefully not too nitpicky to finish this, but the graphics are so beautiful. Shame that such good looking units may have to be destroyed for the greater glory of Poland. : )
Well, I've given the Swedes and Turks their garrison units, and plan on tackling the "Mobilize Army" units that should happen every spring/summer or so.

Seriously, I don't have a release date for it. But I am working on it. (Haven't been that much lately, but hope to pick up the pace today.
Recently I installed the "Fire and Sword" mod for Rome: Total War (Barbarian Invasion, to be exact) and I think I've finally got some good references methinks for the Wallachian and Moldavian infantry.
Too bad I don't know a word of Russian, and they haven't gotten around to releasing the English version of the mod yet...
