      The Canon was only set early 4th century, and promulgated in the Vulgate late 4th. Beyond that documentation is hard to find since the Church was underground and records have been lost. The Feast of the Nativity may be older, or it may have arisen then. Epiphany is actually older and evidence for it dates to Clement. The latest date for the 25th originating a feast of the Nativity comes from Antioch and Crystostem in the late 4th.

      Before that we simply do not know.

        • But we do know that there were "mid-winter" festivals thousands of years prior. I'd be more comfortable with the argument that god chose that date because it was already a celebratory time than no one celebrated at all until the nativity feast.

                        True, the calendar depends on the solistice, as for the sphinx, why do we build giant clocks? Do we worship the god of the 12? Having something large pointing to the solistice is a good way to keep time.
                        The Sphinx was not a giant clock, its evidence pagans celebrated the vernal equinox long before Christians and Jews
