I wouldn't call it simple, and stellar evolution is far from fully understood, but the basic things we use to identify stars are in fact relatively simple. With spectroscopy we can determine the elemental composition of the star (which tells us its age) and also its Doppler shift, which allows us to determine its relative velocity. Distance is a lot trickier. If the star is relatively close to the Earth, we use parallax. Otherwise we have to use a variety of other tricks, generally involving luminosity.
