In laboratories we can easily see the effects that changing environmental factors will have on various organisms. We can make predictions about how changing genes will affect the organism, and then observe the actual effects of the changes made.
More importantly, understanding the factors that evolution works off of has allowed us to feed more people, and do so more efficiently. It is beginning to show promise towards preventing and curing diseases.

Actually there are predictions we can make based on our understanding of evolution. Length of the jaw and wisdom teeth for instance are trends in human evolution that have lead to predictions and are readily observable over time.
Astronomers have the whole picture - because that's how light works. They can see all the different stages. Evolution doesn't work that way. Not only do we not understand the mechanism wrt mutations - we also don't understand the direction because we can't step outside of things and see what's going to happen.
The analogy would be being able to observe other planets in different stages. I hope you can see my point here. When you know where other things have headed, you can better predict what will happen at home.
