I thought that the law required severance, but checking a few random internet sources suggests that you're right. It looks like if a company has a severance policy, they need to follow it, or they run afoul of the law. But the law doesn't require the provision of severance.
I came upon a barroom full of bad Salon pictures in which men with hats on the backs of their heads were wolfing food from a counter. It was the institution of the "free lunch" I had struck. You paid for a drink and got as much as you wanted to eat. For something less than a rupee a day a man can feed himself sumptuously in San Francisco, even though he be a bankrupt. Remember this if ever you are stranded in these parts. ~ Rudyard Kipling, 1891

What?? You don't sign an agreement/contract with your employer when you get
the job? It's all verbal? Like, your pay, obligations, job description, vacation rights...?

You do sign a letter of employment, but it's not a contract in the sense that it defines a term of employment, etc

Most people don't sign one. More professional positions have an offer letter detailing salary, etc.

As far as job descriptions, those are deliberately avoided so that the company can ask you to do anything they want.

The one I just signed only stated my position name (Associate) and the division (Finance). It gave my salary, said I was eligible for a discretionary bonus and said to consult the website for further details on benefits etc. AFAIK no termination details are listed explicitly there.

Normally, it's just an informational sheet that details your salary and other very general details, which you may sign to indicate that you have read it and understand it. For any real detail, you refer to the employee manual. KH's experience squares with mine, in a completely different industry.

Never quit without a backup. At least they want you to take the other position and aren't trying to stop you. I would tell the hiring manager of the other position and let them fight it out. All the while, be nice and ask your current manager what you could do to fill the position. Is there someone they had in mind? Can you get a job posting out for them, etc? Also, explain you are leaving for more exposure, not to piss them off. Kill 'em with kindness.
