The question is not whether you need dishwashers. Of course you do. The question is, assuming a full compliment of dishwashers, waiters, hosts, etc -- what is most important to have SKILLED people in?

A skilled waiter is fun to talk to, makes the right recommendations, tells the right stories, etc. Really good ones are damned entertaining and make a good restaurant awesome.

Really good dishwashers clean plates a bit faster. They are far more dispensable than a personality the guests interact with. This is why people request waiters and not dishwashers.

Waiters are more important IMO, as a customer I'd be cmplaining through the waiter, so a skilled waiter can also halp defuse situations where a **** up in the kitchen won;t mean permenant loss of customers.
