I've done every job (as a manager, fortunately, so a bit better paid); and I'd say the rank in terms of 'value of a good one' is
1. Cook
2. Host
3. Dishwasher
4. Waiter
5. Busboy

Busboy is clearly at the bottom, because your waiters can handle that job as needed, or the host. I put Dishwasher up there because of the rarity of good ones, and the value they add when they ARE good - one of the hardest complaints to take as a manager is "Why is there this speck of food on my dish/lipstick on my coffee cup/etc."...

Waiter is relatively low because it's not that hard to find a good waiter (as the pay is pretty decent at any decent restaurant). Cook is clearly #1 (and I mean line cook just as much as 'fancy known by name' chef). Host is clearly #2, because a good host can make up for pretty lousy waitstaff and busboys; whereas a poor host can make life miserable for your waitstaff and busboys.

Tell you what. I'll eat at the restaurant where it takes twenty minutes for my food to get brought out. You eat at the restaurant where they run out of plates, and you drink out of cups that were used by someone else first.
