Many people unknowingly pour fresh milk down the drain. The date on the label is a "sell by" date for the grocery store. It is not a "use by" date for the consumer. Generally milk is safe andwholesome 7 to 10 days after the date on the label.

Open-faced refridgerated sections are actually quite efficient at keeping things cold. They use a curtain of cold flowing air to keep warm air out and cold air in. It's emitted from the top and sucked in at the bottom and recycled. I suspect it's better than having doors which let the cold air out and warm are in when opened. Geronimo, if the opened milk is getting sour within days, it's perfectly normal. Happens to me too.
You should buy smaller packages, as Spiffor suggested. 1 litre is probably available. Combat the price by buying more - in Europe, you can get a carton with 10 or 12 1 litre containers relatively cheap. Containers are called "tetrapak" here, after the Swedish brand that invented them, and the milk is treated to be durable for a few weeks or more until opened when it goes sour in a couple of days, as is normal.
