I think that we should send them a note thanking them for the trade but just subtly reminding them that we know they tried to screw us.
Something like.
Thanks for the trade for Metal Casting. Luckily we were online and able to accept it in the closing seconds of T116, otherwise we wouldn't have been able to complete the deal by offering you Literature this turn!
So just letting them know that we know, but without (on the surface) seeming like jerks

I don't agree with this. I would just send them a note like ...
"Thanks for MC deal on T116"
... and leave it at that. Internally, we add "-2 you tried to jerk us around!" to our diplo modifiers.Quote: "All Happiness is the release of internal pressure"

I prefer Ruff's message, especially because it's possible that they simply couldn't agree on whether to trade with us until the last second. They could have just as easily offered us the deal after turn timer rolled over to the next turn. (Don't attribute to malice what can be explained by indecision.)

Templars' lack of diplomacy is really annoying. I'm guessing it's because no one on their team can really be bothered anymore since they're in a terrible position in the game. But they should really reply to emails and tell us that. They started a new tech last turn and it would be really useful to know if they accepted our proposal. Should we sent (yet another) follow up email to see if our tech trade for drama is on?

Yes, definitely. We should also mention (for the umpteenth time) the fact that we would like to secure a NAP with them for the immediate future, to avoid an arms race, blah blah blah.
Templars are like trying to hold a conversation with someone who's extremely hard of hearing. Most of what you say won't be heard, and will be wasted effort, but if you scream enough you can occasionally get your point across. Remember, we DID manage to get them to trade us Metal Casting, just be never shutting up about it.
