Well, I think I've got the siege figured out...
In one of my playtests I realized that most of the units were going towards Vienna, but were taking the "easier" route - going north through Esztergom and Pressburg (the way that didn't have that perfidious Frontier unit in the way). So, with some experimentation, I decided to play with impassible terrain a bit - I placed some impassible ex-Tundra in between Pressburg and Esztergom, and made sure that Pasha couldn't walk across that terrain. Sure enough, while a number of units went north, Kara Mustafa went the way he was supposed to go:
Since then, I've made all the "regular" units involved in the Turkish march unable to go across "impassible" terrain, which means that they'll all have to go the southern route (leaving the upper option to the Hungarian vassals/rebels, which I think was true historically), but depriving most of the Turkish army of the opportunity to go across swamps and mountains. But that shouldn't be that big a deal.
Attached below is an alternate Brandenburg dragoon unit. I got this off a depiction of an enlisted dragoon of the 2nd Brandenburg Dragoon Regiment, which was from either around or in my scenario's time period. I might use it in the game, but I'm not sure...
