1. I have found that one can decoy U-boats away from the convoy routes. Keeping a sharp eye on where they seem to come from is also a good idea. They are not hard to kill if located as soon as they are spawned.

2. What you played was a MGE-TOT conversion with none of the bugs corrected, especially the 'too many units'. The way the basic conversion project is progressing it will take a while to make all the absolutely necessary alterations.
