I'd like to see an RPG in the mold of Ultima VII. The land of Britannia was really immersive. The NPCs were especially impressive, with a good amount of unique dialogue and daily routines. It was fun just to go off an explore the countryside. All of the dungeons were well made (even the optional ones), and even though 90% of the game was side-quests, they were all very interesting.
If a game could bring that Ultima VII experience into this century I think that it'd not only be a great game, but would sell fantastically. It would be the new benchmark for RPGs.
Ultima VII did have a problem with a poor combat engine though, which is why I think the system introduced in Final Fantasy XII should be the wave of the future. FFXII basically has infinity engine style combat, but you can actually program artifical intelligence routines into your party. So, even though you're not directly controlling everybody (and the combat is fast) you know what everybody is doing and why.
