        Perfectly seasoned and coated baked chicken breasts. Finally a way to wake up those boring weekday meals.


        Really easy, tasty and I think at least ok health-wise (I tend to skimp a little on the butter/marg/whatever). I sometimes go with Panko instead of the breadcrumbs.

          Guy - I'm totally gonna try that pasta dish.

          Dan - Risotto is fairly healthy, IIRC, though it takes a while to make. It's simple, but it always takes me an hour to produce. I go with a pretty basic approach: 1 cup aborio rice, 1 cup white wine, 3 cups low fat/low sodium chicken broth, 1 onion (chopped), several garlic cloves (diced), grape tomatoes, fresh basil & grated parm for serving. You saute the garlic & onion in olive oil for a minute or too, add the rice, stir, cook for a minute, add the wine, stir, simmer until mostly absorbed, add a cup of broth, simmer until mostly absorbed, repeat until the broth is gone. You can do variations pretty easily.

                Wrong, MRT. So wrong. Things are MORE expensive in the ghetto than in the rest of the country. Cost of living in cities is higher. I explored that in another thread where I noted how much higher cost of living (excluding housing) is in Philadelphia vs. Fairfax county, VA, even though Philadelphia's median household income is 1/3rd of Fairfax's.

                  Philadelphia has an overall cost of living index which equates it with middle cost of living locations. The overall cost of living index is comprised of the prices for defined quantities of the same goods and services across all 13 Basket Groups. Philadelphia is currently ranked 121 overall, most expensive place in the world for expatriates to live, out of 300 international locations.
                  Grocery costs for food, non-alcoholic beverages and cleaning material items such as baby consumables, baked goods, baking, canned foods, cheese, cleaning products, dairy, fresh fruits, fresh vegetables, fruit juices, meat, oil & vinegars, pet food, pre-prepared meals, sauces, seafood, snacks, soft drinks, spices & herbs is relatively more expensive compared to other cities with a rank of 48 out of 300.

                  Sorry, MRT. You are wrong. I'm guessing the $8/lb ribeye is inflated.

                          Anybody have a dead-simple lasagna recipe?

                              I wouldn't choose Stouffer's, but yeah, there are some tasty frozen lasagna.

                              Whoops, turns out I would choose Stouffer's, their Farmer's Harvest product is quite good.

                                Mix together:

                                2 lb ground beef or ground sausage - cooked + drained
                                ¼ cup chopped green pepper
                                ¼ cup onion chopped
                                1 can mushrooms
                                2 cans pizza sauce
                                Parmesan cheese
                                Shredded mozzarella cheese
                                Ricotta cheese

                                Layer with noodles in casserole dish, bake at 350 (covered) for 1 hr


                                This is my mom's recipe - I leave off the ricotta and add garlic + hot sauce


                                Edit: The recipe also says that you can nuke it for ten minutes instead of baking for an hour
