Most Latinos aren't. Most are Mestizo, given that most Latinos in the US are Mexican, and the Mexican population is primarily Mestizo.

Puerto Ricans as a group are generally "whiter" (More European), but then also "blacker" (more people with African descent) than Mexicans because the Mestizo population there is smaller.

Latino is not a racial category, it is an ehtnic category - Latinos come in all races (including East Asian).

We can't assume a direct coronation with the ethnic mix present in Mexico and that of Mexican immigrants in the US. Their are selection biases at work in getting into and staying in the US. Also any immigrant population in the US will tend to become 'whiter' as it mixes with the dominant Anglo population. My guess would be that among self identified 'Mexican-Americans' the average is about half Mestizo and half European ancestry though of course its a spectrum.

I would disagree - most Mexican immigrants are from the lower socio-economic spectrum, and thus more would tend to be Mestizo, or even indigenous, than "white." As for mixing, that is what Mestizo are, a "white," indigenous mix, so a Mestizo and an Anglo remains Mestizo, at least in the US, with what Sandman called the "one drop" policy.

Indeed... your race is the answer you give to the question, "What race are you?" (or even, "What race do you consider yourself?").

Latinos are, by the way, generally considered to be of different racial categories, 'hispanic' not being a race but a category of races. Most of our surveys have separate questions, now, 'Do you consider yourself of Hispanic origin', and 'What race do you consider yourself: White, Black, Asian, Alaskan, Hawaiian/Islander, Other', allowing a punch of 'White' and 'Hispanic' simultaneously.
