This is misleading. Jesus never said nor thought that Christians shouldn't obey political laws.

To compare the Koran specifically states that all Muslims who convert to other religions must be given a chance to convert back but if they refuse they must be killed. Huge difference.

Islam is specific as its Holy Book also contains political laws. You may sure claim that there are no such laws in the New Testament, but since religion will always be organized into 'earthly' matters anyway, you can't dissociate Christianism from its Churches.

I said rabbinical laws not political laws. Christians are taught that most of the orders of the old testament like the food laws or the orders to stone to death people who don't observe the sabbath are not to be upheld though some basic ones (such as the ten commandments) are to be upheld. Exactly what is and isn't to be upheld has been a source of constant argument between Christian groups for the last 2000 years.

None of this has anything to do with political laws/laws of Caesar.

So, do I go into detail about the evolution and meaning of Jewish law, wrt idol worshippers, gays, etc? Or do I leave it be, and let secularists talk about how eevil the "old" testament is, while Christians talk about how "old" and inapplicable the "old" testament is?

The rabbis had already effectively revised the laws that you call "rabbinic" laws. A discussion of the death penalty from shortly after that period, mainly turns on the relationship between the frequency of its application, and the amount of murders committed. Its pretty clear it was rarely if ever applied against anyone other than murderers.
