The Mayans didn't...at Chichen Itza there's an observatory in the old part of the site for that sort of thing. In fact Chichen Itza itself has that snake effect up the side of it at the spring equinox (I think), possibly used to time planting, but probably just a nice effect...
Most of them, as you say, were religious in nature, and used to "preach" to the masses.
