IMHO, you will always need to have some defense in interior cities. The reason is that you can't risk the lucky shot. As you have to protect your coast fully, and an attacker can focus on 1 point, the defender can never have so many infs that he is sure there is no risk that one of his cities won't fall. Hence the need for some defense.
BTW, that classical doughnut attack was not against undefended cities (and it was a member from GoW, H_E, who performed it on a Lego guy), but against very poorly defended cities. It just used a ton of cavs, as there were no tanks available. And the reason was the need for uranium to construct the last part of the spaceship...
