Usually when my dad wants a quick meal and he's got chicken breast, he makes supremes (basically a giant chicken nugget). I think he cuts 'em in half lengthwise, then dips them on both sides in egg before shaking them in a paper bag filled with flour, salt and pepper. Then he just pan-fries them. Usually they're served with a cream sauce though, and that might be more bother than you care for combined with the dip-and-shake.Comment

Though now that I think about it, chopping may not be so bad. When I moved in to my place, I bought all sorts of colour-coded chopping boards for different kinds of foods, and knives, and stuff. Chicken Breast Recipe
Take 2 Chicken Breasts or even Boneless Breasts (We have a freezer for when they go on sale)
Preheat Oven to 380 degrees
Take a pan and put the 2 breasts in it, add two cans of Creme of Chicken Soup and 3/4 can of water.
Bake about an hour depending on oven
Make either Mashed Potatos or what I prefer white rice.
Cover the rice with the chicken gravy.
I love that and you can with many varieties of sides.
