  • Chicken Breasts

    I eat a lot of steak - some weeks, every day. I like it because it's easy to cook (dust it with salt and pepper, freeze, thaw, throw on the grill) and tastes good.

    But yesterday I bought 4 lbs of frozen skinless chicken breast. What are some easy (i.e. as easy as teh steak preparation outlined above) recipes for cooking them? Bear in mind I don't have too much in teh way of spices, and can't be bothered to marinate or chop anything or use my oven - grill, frying pan, or microwave only.

            Chicken fajitas are easy to make and all you need is a frying pan or two. You do need to do some chopping, however.

            I have some other good, simple chicken recipes, but they require use of the oven. They are actually probably easier overall than the fajitas, because there is no chopping...

              1. Parbroiled chicken in a reduction sauce.

              Take chicken breast (whole and thawed) and put it in a frying pan, with a little bit of oil, and whatever spices you like. Add something to give it flavor - either vinegar, apple juice, flavored oil. Add a cup or so of it, not enough to cover the chicken but just enough so it's not frying. Cook it until the chicken is done (fork test if you're not comfortable doing this on your own). Then take the chicken out, add a cup of chicken broth and again whatever flavoring you want, some veggies if you like, and cook it for a few minutes until it "reduces" by about half. That makes your sauce. Then pour it over the chicken (and rice, you should make rice with it)

                2. Stir fry chicken with vegetables

                This is easy. Cut up the chicken into small pieces, fry it in oil or butter until cooked, with some seasoning if you want. Take out the chicken, add vegetables (frozen, NOT thawed), cook until done; you can add to them (while cooking) soy sauce or vinegar or something else of that sort (bitter/salty). Then add the chicken back in and cook briefly until warmed, and serve, again over rice.
