I can tell you that, within the Detroit MSA, those Lebanese are highly, highly concentrated in and around Dearborn specifically. I don't have the census figures for this, but there are precious few in, for instance, Livonia (my actual hometown, and until it's population dropped below 100K, literally the whitest city in the US > 100K).

Montreal is ~6 times larger than Dearborn and ~18 times more populous. Comparing the Detroit metro to Montreal certainly isn't perfect, but it's a lot closer to an apples to apples comparison than Montreal and Dearborn.

Shish taouk is completely authentic Lebanese cuisine. Just because the Turks might have invented it doesn't make it NOT Lebanese any more than Chicago pizza isn't American.
