When she refuses to sign the ticket, I hear her say, "Take me to jail." But once she's out of the car, she says, "Give me the ticket and I'll sign." At that point, the cop had won. But he doesn't give her the ticket, he starts pushing her around. He was wrong.

Yeah, if nothing else, that's the especially rich part of the story. This equals beating up an already arrested person.

Come on guys, what is a big guy police officer in his best years supposed to do when he's confronted with a monster mutant grandma bigger than the Empire State Building? It was a life and death thing, there was no other choice.
Well right out of the gate, the woman was acting in an extremely hostile manner. Now perhaps I am somewhat stereotyping Texas, but unlike many other Southern States, Texas does not have an open carry law when it comes to pistols(CCDW only). Now with that being stated, obviously when you run the individual in questions through NCIC it shoud show their CCDW status, but unfortunately NCIC is not always entirely accurate or even always available. Now with that being said, the woman in question, made it openly clear to the officer, that she wished to be arrested(since not signing your ticket, gets both your license pulled, and your ass carted off to jail). At this point in the incident, she is now resisting arrest, as she clearly has voluntarility allowed the officer to arrest her. As per him pushing the old woman, if you look at the video, he was simply moving himself and the subject off the road. Now throughout the whole incident the woman was extremely combative, and acted in a manner, which any officer would see as hostile. Also, obviously the officer is not going to escalate to deadly force, due to both the fact the the action would be unwarranted, and simply it would not be necessary for the situation. Now he could have deployed his ASP baton, though one of two solid strikes from the ASP would probably have done significant ammounts of damage to an extremely elderly woman. Finally, in most states, there is a prohibition for police officers to deploy their OC Spary on elderly subjects. With all of the above having been said, the officer used a less than leathal alternative to subdue the subject, and he acted in accordance with his unit's use of force policy. All in all, he acted professionally and maintained the honor and integrity of his department.

I'll bet his unit's force policy does not permit the torture of little old ladies who are complying with an officer's order merely because he does not like her attitude.
