      Mmmm! Quesadillos

      2 flour tortillas, some cooking spray, some frozen chicken fajita strips, a few handfuls of shredded cheese, a few tablespoons of Rotel, nuke the strips, spay the torts and put the cheese n rotel on sone, cheese and nuked chicken on the other, merge and slice into 6-8 wedges, get your sour cream on. (I'm pretty much eating within 5 minutes of starting including washing the pan).

        For me it doesn't make sense to cook for one person and even if my girlfriend is over it often seems like to much. I either end up with left overs or it ends up costing about the same as buying it from a restaurant so why not just buy it pre-made?

          Well I did cook a Thai green curry but cooked 8 portions and froze those I didn't need until later. I often try and cook in bulk like that...then I can just take it out of the freezer and warm it up when I can't be bothered to cook - curry is something that you can freeze and then reheat without any problems.

            Chicken leg rubbed with garam masala roasted over a bed of onions, served with homemade naan.

            I wish I had some chillis and yogurt though :-(
