I'm speaking from personal experience, and from talking to Mexicans that i've known. Particularly when working in the restaurant industry, you could tell the Mexico City folks from the Guadalajara folks from the Juarez/Chihuahua folks very easily, from features like nose shape and facial proportions. Southern Mexicans with a lot of amerindian tended to be much shorter/stockier also.

You might be able to find some statistics on how many people in Mexico report as mestizo, how many are mostly indigenous (~10%) and how many report as being European only.
What I doubt you'll find are the numbers of migrants belonging to each of these categories or the actual breakdown of ancestry of mestizos.

Quebec and Belgium are prime examples of the social explosion that never came (mod some pretty low-level attempts at terrorism). The last I checked they were both peaceful, democratic, rich places. Do you want to bet which society (US, Quebec, Belgium) has had more domestic identity-related violence over the past hundred years?
The most you can point to in those places is some angst and the possibility that at some unspecified point in the future they might end up voting for their own president (or whatever). So what?
Well, speaking as an American of Mexican heritage, I'm pretty much against the idea of "low-level" terrorism happening in either country! And the fact that, as you correctly point out, such violence has happened in the past in the United States perhaps makes the argument stronger to create a firewall against the possibility of this occurring in the future, no?
(Of course, there are plenty of other examples in the rest of the world involving similar disputes that were quite bloody (the Basques leap to mind. As does Northern Ireland.))

Well, we know for sure that those with entirely European ancestry would be accepted as white. The rest may or may not be considered white depending on the mix.
