        "Tejas" didnt evolve in "Texas". In fact it was the other way around.

        Lets see... In Spanish "Texas" is pronounced ´TAY-hahs´. However, while both ways of writting it are correct, it is more common to see it written as "Texas" and not "Tejas" (which would be phonetically more accurate).

        The reason for this is that, while originally "Texas" was prononced ´TAYshas´(which comes from an indian word) the sound ´sh´evolved in a more strong sound ´h´(similar to the ch in "Bach" in German). Both sounds, the soft ´sh´(which has dissapeared in modern Spanish) and the strong ´h´ were written as "x" in old Spanish. However since a couple of centuries ago, the strong ´h´is written as "j", leaving "x" for the sound ´ks´ only. However in some proper nouns as Texas or Mexico the old Spanish way of writting it has been preserved.

        So, while in modern Spanish most people write it as "Texas" the pronunciation is: ´TAYhas´(with strong ´h´), and never ´TAYksas´. Same for "Mexico". It seems that in English they saw these words which are in fact written in old Spanish, but pronounced it like if they were modern Spanish: ´TAYksas´and ´MEKsico´, changing the original sound to a modern ´ks´.

        Another case is "Don Quijote". While in old Spanish it was written "Quixote" it is pronounced ´Quihote´. In this case though the written word has been totally adapted to modern written Spanish and you wont see "Quixote" anymore in any Spanish text.

        So, as you see, it is a somewhat complex topic which leads to funny polemics with mexicans. For them seeing México (they pronounce it ´Mehico´) written as Méjico is slighty less than a personal insult.
