I consider the Potato a 'starch' rather then a vegatable. Starch also includes Pasta naturaly. This clasification is mostly a meal planning tool as my family typicaly cooks a three course meal of meat, starch and vegatable. That said I do like Potatos a lot.

Some of my other favs, Brocolli, Carrots, Zuchini + Squash, Coliflower, Peas, Green Beans, Corn

I think a lot of my dislike stems from texture. Carrots might be a good example. Raw, I can eat them; but cooked, I may or may not. I'm not a fan of cooked.

Corn and peas have low nutritional values as vegetables, right?

I like carrots and tomatos, though tomatos aren't really a vegetable. Celery is good with cream cheese. lettuce on sandwhiches.

I like the crap they put in chinese food, but I don't know what they actually put in there. It's all mixed in so you can't really taste the vegetables. That's the way to do it.

                Onions.

Potatoes and onions are a must for me.

                Did I mention onions?

I also like cabbage (creamed), tomatoes, cucumber, corn, carrots, leek, cauliflower and peas, all in moderation.

And ONIONS! Damn you for not mentioning it once over the course of 50 replies in a vegetable thread. It's a fundamental requirement for most all of the cooking I do.

Onions rock. I just assumed that was a given; kind of like saying, "Well, I'll be damned. The sun rose again today".

I like most veggies. I hate eggplant, unless it is throughly disguised. And I LOATH cucumbers and green peppers.

Other than that I love 'em all, especially peas, corn, artichokes, baby carrots, baby dills, mushrooms, sweet peppers.

Oh, and I don't care for Squash. Or Yams.

Of course I love most vegetables. Potatoes are a must! Also rice, pasta, onions, cucumbers, celery, carrots, broccoli, baby corn, corn on the cob, snowpeas, bok choy, jalapenos, habaneros (any peppers really), garlic, ginger, spinach, etc.

Tomatoes are technically a fruit .

Cucumbers are delicious, by themselves or with dip . Especially when they are nice and crunchy.

They are also really great pickled.
