      Grilling is the cooking method which can be fast, slow, or in between. It simply refers to cooking over a direct heat source with no pans ie just the grill. Smoking is using an indirect heat source (and smoke). BBQ is the sauce (which I dont do, I just use a rub).

        I thought BBQ was using indirect heat: you have the coals around the edges of your grill and put the meat in the middle. Since it's slow, periodically you have to add new charcoal.

              A quick check of TexaxBarbeques.com shows that Sloww is right.

              When most people today think barbeque, what they really are refering to is grilling. They might be thinking of a big juicy steak or a hamburger, which are usually "grilled"(cooked quickly and directly over open flames). But Barbeque is actually the act of slow-cooking food in pits over indirect heat, using burning charcoal or wood as the primary heat source.

                            It isn't just for Joos anymore . It's a bigger grain than table salt (and isn't iodized) and the kind of salt I normally use (well, when I'm not using 'Fleur de sel', but I save that).

                                Ahh, as usual, Wikipedia has the answer. Thanx, Imran.

                                Kosher salt gets its name not because it follows the guidelines for kosher foods as written in the Torah (nearly all salt is kosher, including ordinary table salt), but rather because of its use in making meats kosher, by helping to extract the blood from the meat. Because kosher salt grains are larger than regular table salt grains, when meats are coated in kosher salt the salt does not dissolve readily; the salt remains on the surface of the meat longer, allowing fluids to leach out of the meat.
