What exactly is the red juicy goodness in a steak? One of my friends says he doesn't eat steaks anything less than well-done ( ) because he doesn't like the blood, so I told him it wasn't blood, but couldn't say for sure what it was.

Okay, the researched, serious answer:
No, it's not (mostly) blood. Undoubtedly there is some there, but the cow has been bled prior to being cut up. Meat juices are primarily fats from the meat that break down over time - that's why the number of those juices *increase* as you cook it, not decrease (the blood would just dry up).
