                      While you make a good point about worms and E. Coli...

                      As long as you don't want your meat any browner than medium, I think we'll be a-ok.

                      (Personally, I prefer to order/cook them medium-rare.)

                          That would be more a concern for pork or ground meat. I think rare steak (meaning beef) is OK.

                            Bacteria isn't really a concern for meat unless it's ground or raw. Bacteria can't penetrate too deeply so surface cooking will kill teh bacteria. Ground meat, however, thoroughly distributes the critters all throughout the meat, so it should be cooked done for health reasons, even if medium tastes much better.

                            Worms shouldn't really be a concern in the U.S., though given how little inspection of meat is done these days, Sloww may be on to something.

                            NOTE! This does not apply to chicken. The cooling process for slaughtered chickens involves tossing the carcasses into a vat of water, which allows bacteria to permiate every bit of the bird. Chicken must be cooked to an internal temperature of 170 degress to be safe to eat.
