Warfare in the Americas & Africa seems to have been highly ritualized.
For whatever reason, the rest of the world's civilizations came up with professional, disciplined armies. Sparta started the trend for the "West" and did a lot of damage with it. People noticed it worked. Then Alexander. Then the Romans... there's no going back.
Shaka appears to have been the first African to try it (or rather to make it work).
I think it comes back to the tougher competition in Europe & Asia - with tougher competition comes more warfare. With more warfare comes more value on things that can help you win...
In a situation where you really aren't all that pressed for space/food/resources/etc, there is less need to develop an advanced military.
