You can renegotiate peace on even terms or renegotiate peace with a demand for techs, or gold, or whatever, much like the peace treaty terms demanded at the end of a war. The only catch is – IIRC - if the AI does not accept your demands and you decide to declare war through that particular screen, when you do come back to the table after fighting, those are the only terms you can demand from the AI. No more, no less.
