Willaim financial/creative never makes me sad when I get him in MP games. Since we play on a single landmass, his UU isn't the best but can be fun.

What is the best civ/leader combo for MP?

I enjoy getting Louis XIV on the random draw. Creative is a big early plus in MP games, and Ind helps if you want to build a few key wonders. His UU is a solid one. Muskets with movement can be combined with mounted units to create some real quick moving stacks. His UB comes a tad late for our games, but is reasonably useful if we get to that stage. It sure beats the heck out of "shopping malls".

There really isn't a counter for fireballing. The general counter for mages is to use assassins. Assassins get the marksman promotion which allow them to fight the weakest defending unit in the stack, which pretty much are going to be mages.
There's also drill which is a good general counter for collateral damage. (Fireballs can either knock down the defensive % of walls or they can do collateral.)
Also, there is a protection from fire promotion you could get on some units if you really wanted. I don't usually bother with it though.
