So which unique units do people not like? Out of the ones I've sampled so far I found the Mongol's Keshiks to be the most disappointing. Don't get me wrong, they're a decent unit. But the improvement over a regular horse archer seems barely noticeable.

In comparison to CivIII's UU's... all of them. They've been toned down.
In comparison to other CivIV UUs... for timing reasons you could pick the SEAL and Panzers, but leaving timing aside those are pretty solid. The Camel Archer isn't all that special if you have access to horses, but if you don't it suddenly is awesome.
I guess I'd go with the Jag, although Vel showed what you can do with them. It's more of a personal preference thing... I'm not the type to do a focused early rush like that.

Keshiks can be devastating if you are fighitng in an area with lots of terrain features. On plains and grasslands they are functionally the same as horse archers. On rough terrain they can really be an asset or a pain in the butt, depending on what side you are on.
French muskateers could be very cool, except for the fact that musketmen are often obsoleted one tech after they are learned, since chemistry and grenadiers are generally available for research right after you get gunpowder. I think that if the French got a Grenadier unit that had two movement points instead of a musketman, THAT would be a cool UU.
French muskateers as they are are fairly useless. I also do not like Quechas very much, because they are rendered obsolete as soon as your enemy connects a copper, which can happen twenty or thirty turns into a game on higher levels."Cunnilingus and Psychiatry have brought us to this..."

Musketeers and SEALs are the worst imo. I don't really like Phalanxes either but they have their uses. Used to be Jags in that category too, but tha last patch made them decent.
Keshik is sweet, great for raiding and killing enemy horses. I erate them as an above average UU.

I'm not a fan of the jaguar either, mainly because it actually has LESS strength points than the unit it replaces, which forces you to build more of them and thus pay more unit support costs. 5 vs 6 strength makes a lot more difference than you'd think at first sight when facing cultural defences, promoted archers and/or axe defenders.
Phalanx are great support units, the computer loves to counterattack with mounted units and these will hold up well even against knights.

Each unit has their place really. Jaguars are good if you don't have any iron (And if you plan ahead and pull a jaguar rush, you get quite the advantage... unless you actually have iron).
Camel Archers are useless when you don't have horses, but many a game I'll run into a situation where I don't have horses... (Which screws you over when you need them for cossaks ).
Though really, I don't see much use in SEALs, but I never really used marines to begin with.
