There really is no way to remove wonders from the game permanently. You just have to abstain. As for 1 settler that should be the standard when you start a mutiplayer email game.

Good Question, I guess players/teams will have to deal with that when/if it comes up.

you cant sell the wonders, and you should only have to deal with the ai in 1x1 games

On the production screen click build, a list of improvements comes up in green on your left. Click on the improvement in question, then click Sell, then confirm. You won't regret it
