Turns out I always seem to have enough. Just this week I returned from the store and started cooking only to realized that I forgot to by Parmesan cheese. Meal ruined, right? Well, I check the fridge and there's an unopened bag of grated Parmesan sitting on the top shelf. Either I have incredible powers of foresight or I'm lucky enough to be visited by the Parmesan gnomes.

It's rare I use Parmesan, local hard cheeses are better.
