My uncle does the same. I don't have his recipe though.

If I'm cooking leeks they're either in a stew, or roasted with my Sunday dinner.

I tried reading this whole thread, but I had to take a leek in the middle of it.
We're sorry, the voices in my head are not available at this time. Please try back again soon.

When I went to England I had ****-a-leekie soup and spotted dick just so I could say that I had ****-a-leekie soup and spotted dick. The spotted dick was so-so, but the ****-a-leekie soup was great.

Um, when my mother makes leek-and-potato soup, I know evaporated milk is involved somehow...that's all I know, though, aside from the leeks and potatoes.

Leeks are what you take in the kitchen sink after a night of beer drinking and the woman is clogging up the bathroom.

                        Leek bhajias are good.

Mix up a normal bhajia batter (simplest version - gram flour, water, garam masala, salt - mixed to a thin runny paste)

finely slice some leeks (and mix with some onions, green chillis if you want).

Mix the sliced veg through the batter, all the veg should be covered.

Get a spoonful of the veg/batter mix and deep fry for a couple of mins until golden. Serve hot with chutney/raita

Meat reserved, add leeks* as noted in your recipe, a cup of barley, chopped prunes. Simmer until leeks are soft, return reserved meat, and simmer ten minutes to finish.

*: leeks tend to have a lot of grit in them, due to the way they're grown. A simple way to clean them is to split them in half almost to the base, fanning them out and swishing them in a pot of cold water, changing the water as needed. This is also why "half moon" pieces are typical.
No, I did not steal that from somebody on Something Awful.

Try cutting most of the meat off and browning it in a pan. Then add the browned meats and deglazed juices back into the soup to cook with the carcass. It makes a darker and more strongly flavoured end product.

Meat without carmelization just isn't ever going to be as flavorful.
