      The benefits of frying with animal fat are not worth it. The difference in taste is minor, the costs much higher, and the hygiene much more of a concern.

      Unless this is going to be a truly luxury place, he should focus on reaching quality with peanut oil.

      BTW peanut oil is not dirt cheap, it's one of the better vegetal oils.

                        Been to Belgium and had the fries, some were good and some were not good. I was comparing McDonald's to other fast food outlets. As far as fastfood goes McD's has the best fries even though they use highly processed pre-frozen stock largely because their twice fried process is so much better then the other fastfood places.
