  • Calling anyone who eats meat pies, pasty's, tucks etc....I need help

    I have been offered a storefront by an investor who is throwing quite a bit of money at me. Which is good however, I want to serve savory pies. Now here in Texas we know all about sweet pies, fried pies etc.. not to much in the savory or meat pie pasty catagory.

    So I need your opinions, advice, recipes if you have them. What makes a good meat pie for you? What is it about that one particular place that you got to get your favorite meat pie. What is a pasty? NOT some dictionary definition. What do you look for in a good meat pie. Tell me about the crust, the shapes, sizes anything you can think of that might help me out. Does your mum make a great meat pie? Can I have her recipe? Pictures please if you have them of real meat pies.

      What I like in a meat pie is dry, but not crumbling filling, and the dough should consist of many thin layers that crumble into flakes when you bite the pie, I have no idea what the proper name of it is.
      I'm also partial to potato pies: sweetish leavened dough filled with seasoned mashed potatoes. The same dough can be used with egg/onion or cabbage filling.

            Gross? It's very similar to a knish. Tasty change-of-pace.

            As to the OP, we don't tend to have savory pies around here. But we do have empanadas (the Cuban version). Great fast food. I like the spicy kind.
            I came upon a barroom full of bad Salon pictures in which men with hats on the backs of their heads were wolfing food from a counter.               To me, a good pie or pasty has to have:

              i) a moist pastry - if it's hard, flaky or dry in anyway it's a no-no. Some people like it like that, but not me.
              ii) a meaty filling with a thick sauce. By meaty, it doesn't have to be meat, just have something to bite into. Diced potato and leek in a thick chicken stock is good.

              The best pie experience is in a handheld format (i.e. pasty), where you roll back the bag you are holding it in. If you want a sit down affair, you've got to have it with mash and gravy. A regular original standard cornish pasty is ok, but for me has to go with baked beans to make a good meal.

              My favourite flavours of pasty:
              i) Chicken and mushroom
              ii) Steak and stilton
              iii) Chicken Balti if I am in a heathen mood.

              My favourite meat pies:
              i) Chicken and leek
              ii) Steak and kidney


              I miss Hannah's pies in Sydney. The store was directly opposite my house.

                And yes, a handheld format is the best. A slice of a large round meat pie is pretty, but if you try to eat it on the go you'll get crumbs of minced meat all over you. Also, chicken giblets pie. I'm hungry now

                    My favorite meat pie is the french-canadian "tortiere". Served by the slice with some mango-ginger chutney
