I like to make tacos out of ham hocks (the lower calf, ankle, and foot of a pig). You boil the ham hock for about two hours so that all the tendons, ligaments, and even the bone marrow melt into a gelatinous base and the meat just falls off the bones. You pluck the meat out of the soupy like melted stuff, chop it up, and then use it for tacos while the left over gelatin-fat liquid makes a hell of an additive into split pea soup especially if you put any left over ham hock meat into the soup.Originally posted by notyoueither View PostI've had pea soup that uses pork fat as a base.
