              Chopped into cubes, cooked with olive oil in an old fashioned iron skillet with onions, garlic, Andouille sausage (also chopped into bite sized pieces), add cajun spice mix, and top with freshly shredded cheddar cheese. Allow time for cheese to melt. YUM!

                  I usually make latkes with potatoes (eggs, garlic, onions, cheese, flour, salt, and pepper), usually topped with the rooster red chili garlic sauce (that goes with everything)...

                        It's really hard to ruin a potato, except maybe if you decide to turn it into vodka. Otherwise, I really like them in all their many forms.
