while i grew up with meat well done, and still tend to lean towards medium, if I was at a place like Mortons Id lean the other way. If youre going to order well done, its pretty wasteful to go to such a fancy place. Medium rare or medium. I don't like it tough, but the texture of rare steak is unappealing, to say the least. Slippery and creepy. A little grey on the edges, nicely pink in the middle but not slimy-raw.
