              Hmm. I love halva myself, but it is difficult to eat very much without going into total sugar overload.


              You could break some up and make ice cream with it.

              Halva ice-cream
              Chef: Suzanne Quintner


              Degree of difficulty: Low

              You need:
              6 eggs separated
              500ml cream
              2/3 cup castor sugar
              250gm flaked halva

              Method:
              Beat egg yolks and sugar until very light and creamy.

              Whip cream lightly.

              Beat egg whites with a pinch of salt until stiff.

              Fold egg mixture and cream together carefully, then add whites and lastly, add halva.

              Freeze for at least 24 hours in a plastic lined loaf pan or Swiss well tin.

              Cut into squares/slices.

              Serving Suggestion: Serve with a fruit puree or poached fruit.



              I think if you served it with something like a tart cherry compote or puree then the sweetness would not be so pronounced.

              I had halva ice cream in Australia, and green tea and black sesame seed ice creams too.

              This is halva ice cream made in a kulfi mould, served with jalebis and poached quince. Another recipe from Australia...

                • A modified rice noodle soup based on a recipe from Singapore. The broth is from turkey bones/skin, simmered with galangel (Thai ginger) and lemon grass. After this is strained, it is cooled (seven cups) and the turkey fat is saved.

                  Then I diced about five garlic cloves, sauteed them in the turkey fat (it has much of the galangel/lemon grass flavor) then added tumeric and freshly ground coriander with about one third (freshly ground) of a dried homegrown jalepeno. Then I sauteed a videlia onion (green onions by preference but my little girl does not like them). Then mushrooms and turkey neck meat and some chicken breast meat from the freezer. Finally add the rice noodles and three shredded carrots.
