    are there any other cooks or would-be-chefs here? let's share some recipies.

    chili (working title):
    1# ground beef
    1# pound sweet onion
    two 28 oz cans diced tomato
    two 15.5 oz cans of kidney beans
    1/4 cup minced garlic
    2 tbsp each ground cumin and chili powder
    1 tbsp each of pepper, salt
    4 fresh, large jalapeños, 1/4 inch dice
    750ml burgundy wine
    1/4 cup cilantro, chopped.

    directions: brown beef and drain. add onions, julienned, garlic, cumin, chili powder, salt, and pepper. sauteé until onions are cooked. transfer to the crock pot and add beans, tomato, jalapeños, cilantro, and one third of the bottle of wine (drink the rest). set crock pot to high, and simmer for six hours.

        My dinner tonight:

        Sausages and bread.

        Sausage Sizzle

        The extent of my cooking:
        Cook rice, cook chicken, add some frozen vege and an indian sauce. Serve, eat.

          A good recipe I found on another internet forum:

          Nick's Blue Cheese and Jalapeño Burgers

          --------------Ingredients--------------
          1 lb. Ground beef
          3 Large jalapeños
          4 oz. Crumbled blue cheese
          1 Tbs. Onion powder
          1 Tbs. Garlic powder
          1 Tbs. Soy sauce (or Tamari)
          1 Tsp. Salt
          Swiss cheese slices
          Onion buns

          Instructions:
          1. Get yourself 3 large jalapeños. Slice in half lengthwise and remove the seeds and threads. If you need some kick, leave some seeds or use more potent peppers.

          2. Dice them up and throw them into a mixing bowl.

          3. Purchase 1lb of ground beef. I like the fattier variety because it tastes better - say 73% Lean, 27% Fat.

          4. Place into mixing bowl with jalapeños.

          5. Purchase a 4 oz. package of crumbled blue cheese.

          6. Pour 2 oz. to 4 oz. of blue cheese into mixing bowl depending on your preference.

          7. Get the following ingredients: Onion powder, garlic powder, soy sauce (or Tamari for better flavor), and salt (kosher salt for better flavor).

          8. To the mixing bowl, add 1 tablespoon of onion powder, 1 tablespoon of garlic powder, 1 tablespoon of soy sauce, and 1 teaspoon of salt (or 1 tablespoon if you like it saltier).

          9. Knead together well.

          10. Form into 2 or 3 patties.

          11. Light your grill with a good, natural mesquite charcoal a.k.a. “Cowboy Charcoal.” The flavor is MUCH better than traditional charcoal briquettes. B&B is a good brand.

          12. Cook the burgers to your liking. I like mine medium.

          13. Throw 2 or 3 slices of Swiss cheese on each burger and close the lid.

          14. Adorn with your condiments of choice and enjoy.

            Crock Pot Enchilada Casserole
            INGREDIENTS:
            1 (14 1/2 oz.) can tomatoes
            1 small onion, chopped fine
            1 clove garlic, minced fine
            1/2 tsp. ground red pepper
            1/2 tsp. salt
            1 can tomato paste (6 oz)
            1 lb. ground beef, browned
            1 pkg. dry taco seasoning mix
            2 cups shredded Cheddar cheese
            9 corn tortillas
            DIRECTIONS:

            Sauce:
            Blend tomatoes with onion and garlic in blender.
            Pour in medium saucepan. Add pepper, salt and
            tomato paste. Heat until boiling, then simmer 5 to
            10 minutes. Place 3 tortillas in bottom of crock pot.
            Layer on tortillas 1/3 of ground beef, 1/3 tomato sauce
            and 1/3 Cheddar cheese, then 3 more tortillas.
            Repeat each layer 2 more times, ending with cheese.
            Cover and cook on low 6 to 8 hours.

              Had some vitello con fungi porcini braised in tomato sauce with garlic butter cooked zucchini. :y:
