I Like their food better than Ethiopian (that teff bread of theirs annoys me, too sour), and have not had enough Nigerian food to judge, though Mash sounds good.

I'm another India voter, by a long shot. There's so many regions and climates, I'd surely find a sweet spot for me, probably in the north (maybe Assam?, Kashmir for sure if it were more safe). Also, Europeans
aren't so alien there.

My second vote would go to Ethiopia, I can't stand tropical climates like in most of Nigeria and who would want to be in Bangladesh during the monsoon. In Ethiopia there's mountains and parts of the year have a quite nice climate (yes, you're right, that's important to me).
Also, I find Ethiopia's religious heritage very interesting.

Ethiopia actually has a fair amount of Jews. I'm sure if you really looked you'd be able to find kosher places.

actually just about all the Falasha have emigrated to Israel. There are still some Falashamura there (people raised Christian, who are descended from Falashas converted (they say) by force, and want to return to Judaism and go to Israel)

I wasnt so much referring to the presence of Jews, or have a kosher butcher (i dont keep that strictly kosher yet anyway) but more to a civilizational affinity on certain things.
