    I was only involved in organizing the pig, not in strapping it to the stick and not in cooking it either. The guy who was responsible for the barbecue however constantly covered its skin in some marinade he made of beer and different spices. Its taste was very nice. Maybe I should go t othe Phils and try one there

    edit: I will admit though, on that picture it looks like the back is seriously burned...

      Years ago, I made a great meat loaf out of 2/3 burger and 1/3 Jimmy Dean spicy sausage. I don't remember the receipe but I did put in some chopped-up celery and something to firm it up...like bread crumbs or corn meal or some such.

      Chili Sizes
      I also had a simple receipe for chili sizes. Get a can of spicy chili, toss in a half of chopped up onion, season with lots onon powder and lots of garlic powder. Heat.

      Put the other half of the chopped up onion into the burger meat and form the burgers into patties. Sprinkle liberally with onion powder and garlic. Cook.

      Put the cooked burger on a plate. Smother with chili. Serve with a mug cold beer.

      For proper ambiance: Eat while wearing a T-Shirt.

        That would bring great shame to a Philippine cook. My bro in law's (Bonifacio) bamboo burned and broke and so my pa in law's birthday pig took a dive into the fire. The back had a tiny black spot on it during the moment before it was rescued. Bonifacio was a broken man.

        A nice rich brown like mahogany, that's what you're looking for. They really are careful with the skin as it's their favorite part.

        Maybe your pig was too big.

        Certainly you should come to the Phils next time we go.
