      My family had a bakery, and you are absolutely correct. It's not for everyone, and it mostly involves waking up early and doing long hours - although the latter was more due to the bakery being a family enterprise.

      My father woke up at 3 AM, went to work, and baked all the way through the morning with my uncle until around noon. Then they had to do the books, clean up and pack up the place, and dad was home by 3 PM. He'd take a nap, and go to bed at nine.

      They had thousands of dollars worth of various equipment there, although I admit some of that stuff was cool, like the device used to squirt marmelade inside pastries. And the sourdough starter was over 30 years old!

      My parents told me they'd never talk to me again if I ever decided to become a baker. Not likey they needed to, though.

      My favourite bread would be rye bread made by our bakery, but since that's no longer available, there's a certain Finnish brand that I like.

        for just eating plain, or with butter, some nice crusty, dense, kinda multigrain, or sourdough, or that kinda thing.

        For most sandwiches, esp with meat, rye bread.

        For tuna or similar sandwiches, whole wheat.

        For mornings, bagels, with cream cheese and lox and tomatoes. Or with other cheeses, like havarti.

        Also French bread, with cheese.

          That's exactly what I intend to do. Different variations on the monkey bread. It's a type of pull apart bread and each individual piece is dipped in butter before it's baked and layered. That's where you could add the different ingredients. You know, ham and cheese monkey bread, cinnimon apple monkey bread and of course banna nut. Just went down today and research the names to see if the one I came up with was taken and it isn't. So if you're going to specialize in monkey bread what do you think of the name "The Funky Monkey" for the bakery? It needs to be a bit on the gimicky side to attract attention.

            I already get up early to see patients most days I'm at work by 6 a.m. and husband is a night shift worker who gets off around 2 or 3, he could help out in the morning getting things started.

            Yeah I guess I wasn't clear above, just the one type of monkey bread with different varations as well as offer tea and coffee husband says you have to have wireless internet connections. I don't know if I want to go that far but definately going to add my mother sugar cookies and brownines to the menu.

              I particularly like authentic-tasting sourdough but that can only be a side-dish to a breakfast, not the entree. thing.

              If it's a yuppie-puppie town: I suggest coissants.

              What I've always wanted to see invented is some kind of test-tube shaped bread. That way, you can stuff all kinds of good stuff inside (sausage, scrambled eggs), take it out of the microwave, and jump into the car and drive to work while eating breakfast.

                  Rye bread

                  Paska ( a Ukranian egg bread, similar to challah), but only my grandfather's -- he was a baker, and a great one. He passed a lot of know-how on to my mom, whose cakes and cookies are extraordinary -- but he seems to have taken his bread secrets to the grave with him.

                    That doesn't sound like something yuppies go after. You need something healthier. Like full grain type bread. Esp if you use only organic ingridients.

                              I like Pizza Bread. Mmmmm, butcher shop food.

                              Apparently Amish Bread is really good and easy to make. That stuff would always be passed around from family to family. The starter mix that is.

                                Oh I already thought of a pizza one, apple carmel cinnimon, garlic and parmesan, cherry strusel, spinach and feta, jalapeno cheese...well the list goes on and on.

                                So how would one go about figuring out just exactly how much to charge for one?
