      A quick and cheap Moroccan recipe for those in a hurry, or students, et cetera...

      Ingredients:

      olive oil

      2 garlic cloves, finely chopped

      1 onion

      1 teaspoon cumin seeds

      1 inch cinnamon

      2 chillies chopped

      1 tin chickpeas (garbanzo beans for Americoms)

      2 tins chopped tomatoes

      1 pickled lemon *

      Or you can buy pickled lemons from any good Mediterranean delicatessen or grocers. If you want to speed up the pickling process, then you can simply boil the prepared lemons in very salted water.


      Method:

      Heat garlic and sliced onion with cumin seeds, cinnamon and chillies in oil a large pan.

      Add 1 tin drained and rinsed chickpeas, 2 tins chopped tomatoes and 1 pickled lemon, quartered.

      Cook for 20 minutes, and at the end stir in a ladle of pitted olives and garnish with crushed fresh mint.

            Meet and tatty pie.

            500g corned beef
            1.25kg chopped potatoes
            250g carrots
            1 huge onion
            1 beef Oxo cube

            Put in a casserole dish and cover with water. Cook for three hours, stirring occasioanlly.

            125g beef suet
            250g flour
            water

            Mix all to make a pastry and roll out. Cover casserole dish and cook for a further 25 minutes.

            Perfect With beetroot, pickled onion or pickled red cabbage
