You can change the name in the multiplayer screen. (Multiplayer -> change name -> back)
I have NO idea why it sais Beavis now though...--

It comes with a half dozen different starting points (~scenarios).
Many parameters are easy to customize, and players often tweak various components to suit their tastes or their historical interpretations. You'll particularly enjoy the event language...quite robust.
A scenario editor in the hopper that should be out soon (not something they promised prior to the purchase, but something it looks like they will deliver shortly anyway...kinda the opposite of another recently released strategy game). Once it is out, customizing will probably be comprable to what it is in CIV 2.

That's a good stop for EU 1 stuff, but the only things there for EU 2 are a few variants of the standard scenarios. EU 2 is a bit too new, still, to have developed a large body of work. The built-in variety and replayability probably lessons the demand for alternative scenarios, also. There are some teams that are trying to develop some pretty ambitious projects, but I'm not sure how far along they are. Plus some would-be designers may be waiting for the scenario tool.
